This cake was created specially for Land Rover’s 70th Anniversary @landrover , ONELIFE Land Rover magazine cover. The process of making it was interesting and fascinating. More than 8kg of chocolate and other ingredients were needed to create it. It’s not just chocolate décor on it; each slice of this chocolate shows every year of Land Rover’s life. During 70 years of its existence, In this work we used a gradient color change technique. Land Rover’s design were constantly changing, and every single chocolate slice of this cake represents its design change. This project was made for the presentation of new chocolate Ruby. The idea was to create a set of elements (cakes) that together would form a single composition. As a result, we got algorithmically modeled cake that consisted of 81 individual cakes, every single was unique in shape. This composition was made using a graphical algorithm editor Grasshopper that can build forms from the simple to the awe-inspiring. Inspyred by Matthew Shlian we took a pyramid and changed the tilt of each object and the area of each top plane, programming and scripting the set of cakes. All of the cakes are different. Inside: mousse with chocolate Ruby and meringue, ganache Ruby. I added a berry confit to the recipe to emphasize the berry flavor of chocolate and add accent. It's always such a pleasure to see a beautiful cake that was made with my mould. There are a lot questions about glazing. The method of coating with a neutral glaze using a spray gun was not invented by me, it's just one of the types of its application. I use a spray gun if I need to glaze a complex shape, so that the glaze will be smooth and thin. Don't forget two important things, first of all, your cake has to be frozen very good, then you have to cover a cake right after you take off the silicone mould. Experiment. Tart #2 Inspired by José @j.margulis , I wasted no time and made the 3D chocolate sculpture by his drawings. I have friends who are crazy about different machines and cutting tools. These unstoppable enthusiasts created their own workshop in my city called Garage Hub. We tried to cut out the slices from many sheets of red and white chocolate. It worked extremely well. Once the cutting was done, I assembled the pieces and put the composition on top of the tarts. What an amazing result! It was a magical collaboration of three artists: a sculptor, an engineer and a pastry chef – each of us an artist in their own domain.
